Are you ever in a hurry in the morning? Do you need something quick as you or your kids are headed out the door? This one is terrific! You could make up a batch of these ahead of time, keep them in the fridge or freezer, and always have a high protein meal available!

There are so many options with this little recipe! Chef Scott’s recipe uses bacon, but I made these with garlic & jalape帽os instead. You could use broccoli, ham & swiss, or you could even do a copycat Starbucks egg bite recipe. They could be served as a snack, made into little mini bites for a party, or have them with a nice salad for brunch. Any way you like it, this recipe is a winner! TIPS & SHORTCUTS

I changed a few things to suit our family. I didn’t want to use bacon this time but had some sliced pickled jalape帽os, which gave it just the right amount of heat. I chopped 2 TBS with some garlic cloves in my Pampered Chef chopper.  It makes quick work of things!

His recipe also calls for salt or his recipe for seasoned salt. I had made my own “everything bagel seasoning” the other day and tossed that in and it was perfect.

I was also running short on eggs and had liquid egg whites in the fridge, so I substituted 3 of the 6 eggs with 3/4 cups of the liquid egg whites instead. It made a nice fluffly egg bite with a teeny bit less fat. You could possibly make the entire thing with egg whites, if you like.

I could include the recipe here, but my goal is to blog my review as I adventure in cooking through this entire cookbook. Plus, I hope maybe you will want to try the cookbook. It really is a good one. I don’t get anything for blogging or promoting it, I just want to share something that I think is good, healthy, and worth the time, money and effort to try.
