Big Mac Chaffle Burger recipe: serves 4

For the Chaffles:
1 egg
1/2c shredded cheddar cheese
Cooking spray
Spray your preheated waffle iron (I used a mini Dash round but any will do). Place just enough chaffle mixture on your waffle iron so that it won鈥檛 overflow. For my little Dash, this was about 3 Tbs. Cook until well done and no longer steaming. I did these ahead of time and let them cool on a rack.


For the Burgers:
1.5lbs ground beef
1-2 tsp of salt
1-2 Tbs minced onion
Mix well and let sit about 15 minutes for flavors to come together. Divide into 4 patties or 8 small patties, if you like. Grill burgers until done and place a piece of cheddar or American cheese on each burger.


Assemble with toppings:
Shredded lettuce
Dill pickle chips
Thousand Island dressing
Sesame seeds (optional)


Although not an original idea (I stole this from Maria Emmerich and adapted it my way), this was great fun to make and my family loved it, including one who doesn’t even like chaffles!

Changing your food to be healthier doesn’t need to be restrictive, hard, or time consuming. It just takes a little creativity. 馃槉
