This soup is reminiscent of a dear friend of mine from years ago. She made this simple soup and this is my version.
Green Bean Soup
6 cloves garlic
1 Tbs bacon fat (or whatever you like)
4 cups green beans
4-6 cups chicken broth
Salt & Pepper to taste
4 Tbs heavy cream or half n half
Sauté the garlic and green beans in your choice of fat for about 5 minutes. Cover and cook about 10 more minutes on low. Add 4-6 cups of chicken broth and simmer until the green beans are tender. Add salt and pepper to taste and finish with half and half or heavy whipping cream.
I sometimes add rotisserie chicken to this. It is comforting and warm for those cooler days or when you don’t feel 100%. It also stays nice in a warm crockpot.
