Poached Chicken

See this short video for a lovely way to poach chicken from Chef Scott in the End Your Carb Confusion Cookbook.

I poached my chicken the night before. It took about 15 minutes on a slow simmer. I saved the broth for another use but the seasoning and flavor is just wonderful. You can find the cookbook on Amazon. I have made many of the recipes by Chef Scott in this cookbook and they are excellent, especially if you are watching your carb intake.

Ingredients:

  • 1/4 c olive oil
  • 2 Tbs lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp oregano
  • 1 tsp cilantro (or 1-2 Tbs fresh) optional
  • 1 lb chicken, cooked and shredded (I poached mine the evening before and pulsed it in a food processor)
  • 2 Tbs salsa

Whisk the above ingredients and pour this over 1 lb of cooked and shredded chicken. Add salt and pepper to taste. Mix well. Layer this on top of salad greens and top with salsa, guacamole and sour cream, if desired. Calories: 316 Protein: 36 g Fat: 14 Carbs: 9

*An alternative way to serve this is to omit the salsa, guacamole and sour cream and to the chicken add: 4 cups of chopped romaine 1 diced tomato 1 red bell pepper, diced Mix all of this together in a bowl and top with sliced avocado. It stores nicely in the fridge for a few days or is it even nice for a boxed lunch or picnic! 馃尭 Enjoy!
