What a simple and quick dish by Chef Scott Parker in his new cookbook, End Your Carb Confusion: The Cookbook. As you may know by now, I am cooking and blogging my way through this cookbook. 😊

​This is an easy dish, especially if you are cooking for 1-2 people! This can be done in one pan! I will be making this frequently when it is just my husband and me, but I needed to get creative since I had 4 at the table and didn’t have a skillet big enough for the meat. This would have been easily solved by perhaps using chicken thighs instead, but I wanted to try and cook this as close to his recipe as possible. My solution was to brown the chicken and just bake it on a cookie sheet and add the soy sauce at the end in the oven, which worked fine. I was still able to use the nice chicken bits and fat in the pan for the greens. I just added some soy sauce to the pan at the end.

TIPS & SHORTCUTS

I didn’t take too many shortcuts because this was such a simple dish. However, some tips would be to add some other nice sides since his recipe called for 2 chicken leg quarters for one person. I was serving 4 people, so we each had just one piece of chicken and I added 2 Asian inspired salads, Sweet & Sour Cucumbers and a simple salad of Iceberg, red onion, and a Carrot Ginger Dressing. You can easily prepare these ahead or while the chicken is browning and/or baking. I just have everything prepped and handy. I also like to clean as I go, if possible. It makes it nice to be able to relax and enjoy our meal with less after dinner clean up.

My Sweet & Sour Cucumbers:
1 English Cucumbers, roughly diced
1 tsp salt
2 tsp Allulose (or use your own sugar free sweetener to taste)
several drops of Sriracha, to taste (optional)
1 tsp rice wine vinegar
a drizzle of toasted sesame oil
a sprinkle of crushed red pepper, optional

Combine all ingredients in a bowl and gently toss. Can be served immediately but best if prepared ahead to marinate at least 15-30 minutes and served cold.

My family enjoyed this meal and we devoured it all, as you can see by what isn’t left!
