This is the best little salad from the End Your Carb Confusion The Cookbook! Many, if not most of these recipes, are for just 1-2 people. I eyeball it and make enough for my family of  four.

鈥婽his is prepared warm with the hot green beans added to the spinach and cabbage, which wilts it. He separated half of the veg and left it unwilted, but I skipped this step and did everything in one bowl.

This is listed as a Phase 2 recipe (if following the Keto Made Simple protocol from Dr. Eric Westman) because of the almonds. You can certainly leave them out! It’s a great salad! I also like the simple dressing recipe included that makes enough for many other salads.

TIPS & SHORTCUTS

1. I made the dressing first, I also used bagged, already trimmed green beans. The 8 minutes cook time is perfect!
2. I put all the cabbage and spinach and then cooked green beans in one bowl. Dressed it and tossed it. I did not divide the veg.
3. I used already roasted and seasoned Mitica Valencia almonds that I love from the deli section. You can omit or use some already chopped or slivered. It gives extra crunch but wouldn’t be terrible if they were omitted.
4. I used my toaster oven to melt the goat cheese instead of the big oven. Personally in hindsight, you could use any cheese you like. Feta would be nice. You could even omit the cheese! 

I made enough of this salad to feed four. Pictured left is what is left after my husband and I ate. I found it very nice served room temperature with our T-Bone steaks. I broiled those seasoned steaks for 7 minutes each side.
