This is a great recipe from Chef Scott and the EYCC: The Cookbook!
鈥婱y family loves spaghetti and when I first started keto/low carb, this was a puzzle for me! How do you eat Italian without the pasta? Thank goodness for zucchini noodles, otherwise known as Zoodles! Although I could make my own, I prefer the time saving benefit of the packaged ones at the grocery.

This recipe was simple to bring together but packed with flavor. I am not used to cooking with Anise seed, but I have done several of his recipes with it, and I love it! It makes a huge difference compared to other bolognese sauces I have made, and I have some good ones.

TIPS & SHORTCUTS

I didn’t need to take many shortcuts with this recipe except I didn’t use fresh herbs. It was already a meal for 4 people. Some of his recipes are just for one and I need to adjust. Anyway, I  usually have dried herbs and spices on hand and they substitute nicely. I just use less than what fresh calls for. You can adjust for your own liking. Experiment! That is the fun of cooking!

I did make a little mistake that actually turned out fine and to me, made things a bit easier. Once I browned the meat, I was supposed to sweat the onion and herbs and spices in the pan and simmer a few things before adding the beef back. I didn’t do that, so I just did it all in one pan. It was good anyway and alleviated needing to set the beef aside somewhere.

My tips and what I did:
1. I used WAY more garlic.
2. I used packaged zucchini noodles and always rinse them.
3. Don’t skip simmering the full hour because it really brings things together, especially the diced tomatoes.
4. Multi-task making other stuff (like a salad) or cleaning up a bit during any cooking or simmering time is helpful.
5. No doubt substituting ground turkey or chicken and chicken/turkey broth would be fine. I like the richness of beef.
